This recipe makes about 15 delicious chewy oat cookies that are the perfect snack during the day. Especially when you hit that 3pm slump. Super easy to make and so so tasty!
10g sunflower seed powder (I use Clearspring sunflower seed powder but you can blend your own or use 10g of another powder such as ground cashews).
55g ground almonds.
1 heaped tbsp cacao powder.
1 tsp baking soda.
7 tbsp maple syrup.
4 tbsp coconut oil.
2 tbsp oat milk.
40g chocolate chips of chopped chocolate - I use 72% Cacao by Loving Earth and chop into chunks.
Preheat oven to 180 degrees.
In a bowl, mix together the oats, ground almonds, sunflower seed powder, baking soda and cacao powder together. Mixing thoroughly to ensure no lumps.
To the mixture add in the maple syrup, coconut oil, oat milk. Mix together until combined - it won’t be a very wet issue so don’t worry if it just seems a little moist.
Finally add in the chopped chocolate and mix well.
Scoop out balls of the mixture (I use a heaped tablespoon) and round into your hands before flattening onto a lined baking tray. Bake for 15-20 mins until golden.
Remove from own and let to cool before eating.
Store in an airtight container for up to 4 days.
